Manuel berry selection at the harvest. Destalking. Cold pellicular maceration (5°C) for 2 days. Fermentation during 20 days at a progressive temperature reaching 30°C, then 3 stomping of the grapes per day at the end of the vinification. Pumping over the juice. Aged in oak barrels (French oak), American and Bulgarian : 1/3 in one-year oak, 1/3 in two-year oak, 1/3 without wood.
Tasting
Purple colour, limpid and concentration. Nose typical and distinguished with red fruit aromas. Powerful palate with all the finesse of smooth tannins with notes of kirsch.
Food and wine pairing
Ideal with red meats, game, truffle based dishes. Served at room temperature.

Vine cultivation
Thinning out of leaves.Manual harvesting with hand selection of grapes. Grapes transported to the estate in small crates by refrigerated truck.

Manuel berry selection at the harvest. Destalking. Maceration during 20 days in the Burgundy style, starting at 35°C and diminishing progressively to finish off at 25°C. Pumping over the juice.
Aged
Aged in small oak barrels (French oak), American & Bulgarian during 12 months.
Tasting
Dark, intense colour. The nose is suave and dominated by ripe red fruits and spices. The mouth is round, pleasant increasing in strength with silky tannins and woody aromas.
Food and wine pairing
Ideal with red meats, veal with mushrooms. Serve at room temperature.
